These are my all-time favourite treats to put together that always impress - even if it’s just me eating them ;-)
What’s great about these is that you can easily change the flavours by using a different combination of nuts, and also play around with your favourite flavours of Young Living essential oils or citrus zest. I love Jaffa flavour so I’ve used an orange essential oil here, but you could also add in Peppermint, Lemon, Lime, Grapefruit or even Lavender!
- 1 cup nuts (e.g. Hazelnuts, almonds, cashews, macadamias, walnuts)
- 1 cup pitted dates
- 1/3 cup cacao
- 1/3 cup shredded/desiccated coconut
- 1 tablespoon chia seeds
- 5 drops Young Living Orange Essential Oil or zest of 1/2 orange
- Coconut oil or water as needed
Place nuts in a food processor and pulse until the nuts are coarsely chopped. Add dates, cacao, shredded coconut, chia seeds, and orange essential oil or zest and pulse again until the mixture sticks together by itself. It should be sticky enough that it will hold when pressed together. If not either add more dates, or add in a little coconut oil or water until you get the desired consistency.
Roll the mixture between your hands to form a ball and coat them with extra shredded coconut if desired.
Place balls in a container and put in the fridge or freezer to set.
